My family and I love banana bread! I used to bake it all the time, and I have been trying to convert my Mom’s old Banana Bread recipe into a gluten-free version since 2013. Yes, you read that correctly, since 2013!

After many failed attempts, I have finally done it!!!! This recipe makes a moist and delicious loaf. My family even said “This tastes like real banana bread, you wouldn’t know it is gluten-free.” Music to my ears! In my previous attempts the batter was always too wet and the bread looked great while baking but then would fall. I added flax meal so that it would have more fiber and the batter would be firmer. Please let me know if you give it a go and what your favorite additions are.

Homemade Gluten-Free Banana Bread Recipe

Ingredients

Makes one loaf

  • 3/4 cup white sugar
  • 1/2 cup butter or margarine
  • 1 egg
  • 4 tablespoons plain yogurt
  • 1 cup mashed bananas (about 3 bananas)
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 2/3 cups of gluten-free flour
  • 1/3 cup flax meal
  • Optional: 3 tablespoons chocolate chips

Preparation

  1. Cream butter, add sugar gradually and beat until light and fluffy.
  2. Add the egg, yogurt, mashed banana and vanilla.
  3. Mix in your dry ingredients until well combined.
  4. Add chocolate chips if desired.
  5. Bake in a preheated 375 F oven for about 25 to 30 minutes.
  6. Check once and awhile to make sure it doesn’t burn. If browning to quickly cover loosely with tin foil.
  7. Let cool and you can eat as it is or ice with your favorite gluten-free cream cheese icing.

Here is the cream cheese recipe I use. I don’t know about you but I love cream cheese icing!! It is great on cakes and cookies too!!! What do you put on your banana bread?

  • 1 pkg. ( 250 grams) cream cheese, room temperature
  • 1/2 cup butter, room temperature
  • 1 teaspoon vanilla
  • 3 to 4 cups icing sugar, as needed. (Also called confectioners or powdered sugar)
  1. Blend the cream cheese and butter together.
  2. Add the vanilla and mix.
  3. Slowly add the icing sugar until you have the consistence you want.
