If your looking for a quick, fun and delicious Easter treat to make with the kids, then try these out!
Super easy to make. Just start with your basic gluten-free rice krispie cake recipe and form balls of the mixture into nest shapes using a muffin tin. I sprayed my tin with cooking spray so that they wouldn't stick. I tried to use a small glass sprayed with cooking spray to form the nests by pushing down on the rice krispie mixture, but it didn't work well. I just got flat disks. I then used my hands to form the disks into nest shapes.
After the rice krispie nests have cooled, add the peanut butter or nut butter of your choice and top with melted chocolate and cool in the fridge till the chocolate is hardened.
Now the fun part, adding your favourite gluten-free candy! I used No Whey Foods gluten-free eggs, they are both gluten-free and lactose free. They taste delicious. See my product review here. I also used Hershey's Easter Eggies. I feel comfortable using Hershey's Eggies even though they don't state they are gluten-free because of the ingredients list. In Canada, if a product contains or may contain gluten it must be labelled, but if you don't feel comfortable using products that are not labelled gluten-free then substitute a gluten-free candy you like.
I also used Dare jelly beans and Brookside chocolate covered almonds (owned by Hershey). They are both labelled gluten-free and I love using them at Easter. The jelly beans bring that pretty Easter pastel colour to Easter treats and the chocolate covered almonds are so shiny and they have an almond in them, so I convince myself they are healthy! ^_^
The combination of rice krispie cake with peanut butter and chocolate is perfect! Definitely use unsweetened peanut butter as this treat is quite sweet. The saltiness of the peanut butter just adds that extra layer of complexity to the flavour of this treat. If you don't have time to make nests you could just make a thin layer of rice krispie cake in a rectangular cake pan and spread a layer of peanut butter and then a layer of melted chocolate on top to make a yummy square suitable for any occasion.
We are a small family and these can be quite rich, so I often make just six nests and a small 8x8 rice krispie cake which I decorate with pastel coloured icing and jelly beans and cut into squares. Very easy to decorate. I just used a teaspoon dipped in the icing and drizzled random patterns on the rice krispie square and added the jelly beans before the icing dried. Jelly beans go great with rice krispie cake! I think its because they are both chewy.
