  • Black raisins: Made from purple or black grapes.
  • Currants: Small and tart, made from Zante grapes. Not to be confused with the black and red currants that are made from berries.
  • Flame raisins: From red grapes, with a slightly tangy flavour.

While raisins are naturally high in sugar, they also provide fiber, antioxidants, and a quick energy boost. Half a cup offers approximately 3.3 grams of fiber, which helps balance their sweetness and supports gut health. Raisins are a versatile ingredient used in snacks, baked goods, and savoury dishes like curries.

In a large bowl combine all the ingredients and mix well.

If you don't like mayonnaise you could substitute sour cream or greek yogurt.

Instead of lemon juice you could use apple cider vinegar.

Ingredients
  • 2 cups shredded carrot
  • 1/2 cup raisins
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
Directions
  1. Peel and shred the carrots finely using a hand grater or food processor.
  2. Optional: Soak the raisins in warm water for about 3-5 minutes until plump, then drain. I like mine dry, so I don't soak them.
  3. Combine mayonnaise and lemon juice in a large bowl. If using, add optional sweetener and spices now.
  4. Add carrots, raisins and other optional additions (if using). Mix well. Adjust the sweetness or acidity to suit your tastes.
  5. Serve immediately or chill before serving.

This recipe is highly adaptable. Try these optional ingredients to give your salad a unique twist:

  • Fruits: Crushed pineapple or shredded Granny Smith apple.
