If you are looking for a quick and easy gluten-free fudge recipe for the holidays, then try this one out. You can adjust the recipe easily to your tastes and it can be made in the microwave.

You can make it in a double boiler or in a bowl over a pot of hot water if you don't want to use the microwave.

My Mom made this often at Christmas. She would change it by adding nuts (walnuts or peanuts), candy such as M &M's or broken candy canes, sprinkles, peanut butter or caramel bits. You can mix these optional ingredients in with the fudge mixture or press them on top of the warm fudge.

The basic recipe is three ingredients: chocolate chips, canned condensed milk and vanilla extract. Therefore it is sometimes called "Three Ingredient Fudge". ^_^ Because it is so quick to make you can find it referred to as "3 Minute Fudge too.

Other optional ingredients such as dried fruit or broken gluten-free chocolate bars work well too.

I like using milk chocolate chips. I like my fudge sweet! Semi-sweet chocolate chips work well too if you like it less sweet. You can also use white chocolate. I'm in Canada, so I use Hershey's Chocolate Chips as they are gluten-free and easy to obtain.

You can use cookie cutters and make festive shapes out of it too!

Use a large microwave safe bowl if using the microwave method. Here are the milk chocolate chips and condensed milk mixed in a bowl.

Above is what the fudge looks like after about 2 minutes in the microwave. All mixed together. This is using 3 cups of milk chocolate chips. If you'd like a softer fudge just use 2 1/2 cups of chocolate chips.

This time I opted to sprinkle different ingredients on three parts of the fudge. I did one plain, one with walnuts, one with Skor bites and one with cut up Charleston Chews.

Here is the fudge after two hours in the fridge. Ready to remove from the pan and cut into bite-size pieces. The fudge should be stored in an airtight container. It can be frozen too.

Gluten-Free Easy Chocolate Fudge

Ingredients
  • 3 cups gluten-free milk chocolate chips (If you like a softer fudge then use 2 1/2 cups)
  • 1 tin of sweetened condensed milk (I like Eagle Brand)
  • 1 teaspoon vanilla extract
  • pinch of salt (optional)
  • Optional: nuts, crushed candy canes, gluten-free candy like M&M's.
Directions
  1. Prepare your pan. I use an 8" x 8" pan. Spray with oil or rub with butter and line with parchment paper up the sides of the pan, this lets you remove the finished fudge, so that it is easier to cut.
  2. Put the chocolate chips and condensed milk in a large microwave safe bowl.
  3. In the microwave, heat for 1 minute, and then give the mixture a stir. Stir with a spatula to get the sides for about a minute. The residual heat will continue melting the chocolate. If needed put the bowl back in the microwave for another 30 seconds and then stir again, do this until the chocolate is melted and it is well combined.
  4. Once melted and combined remove from microwave and add the vanilla extract and optional pinch of salt and stir. Add the optional nuts or candies if you want. I add about 1/4 to 1/2 cup. You can also sprinkle the nuts or candies on top of the fudge and press down lightly.
  5. Pour mixture into your prepared pan and put in fridge to cool until it hardens. Takes about 2 hours.
  6. Remove from fridge when hardened and cut into small squares or festive shapes. Store in an airtight container in the fridge. It can be frozen too. Wrap well with plastic wrap and put in a ziplock bag or airtight container. When ready to use remove from freezer and let thaw overnight in the fridge. Keeps about 2 months in the freezer.

  8. If using the stovetop method, bring water in the pot to a boil and then lower the heat, put your double boiler or bowl over the boiling pot and add the chocolate and condensed milk, stir until melted and combined. Then follow the above directions.
