I like making Cloud Bread. When I first heard of it, I was curious as to how it tasted. Each time I have made it, I found it easy to make and delicious. It will never replace gluten-free bread, but I enjoy the change. It is a very delicate flat bread. Very nice for a light sandwich. Fillings shouldn't be too heavy or thick as the cloud bread is not robust. I usually add egg salad, chicken salad or thinly slice tomatoes. Its also great with jam. You can add other flavours to the mixture such as sesame seeds, spices, or herbs like crushed rosemary or basil.

Cloud Bread

Ingredients
  • 3 egg whites
  • 1/4 teaspoon cream of tartar
  • 3 egg yolks
  • 3 Tablespoons cream cheese
  • Optional: herbs or spices of your choice
Directions
  1. Preheat oven 350 Fahrenheit
  2. Put your baking tray in the oven to preheat. Do not line it with parchment paper yet. I put mine into the oven and then start prepping the ingredients. It is in the oven for about 15 minutes.
  3. Get two bowls. Separate your eggs. Put the whites into your mixing bowl, and the yolks into another bowl.
  4. Now using a electric mixer, add the 1/4 teaspoon of cream of tartar to the egg whites, and beat the egg whites until they are thick and fluffy.
  5. In the second bowl mix the egg yolks and cream cheese until well combined. If adding herbs or spices I add them here.
  6. Then, gently fold the yolk/cream cheese mixture into the fluffy eggs white and cream of tartar mixture. Don't overmix as you need the batter to be as fluffy as possible.
  7. Set batter aside.
  8. Remove the preheated tray from oven, and line with parchment paper then spray with oil. Put about 1/3 cup of batter per bread circle on the tray. Using the back of a spoon spread the mixture into a circle.
  9. Turn the oven down to 325 F and put the tray in the oven.
  10. Bake for 15 minutes.
  11. Remove from oven and let cool.

It is also good as a flat bread with a curry. I usually add some dried onion and garlic powder when I use it with curry. Have you made Cloud Bread? What did you think of it?
