gluten-free waffles with fruit and custard sauce

This custard sauce brings back memories for me. My Mom would always make it when we had waffles. She would serve it hot with the waffles and cut up strawberries.

Gluten-Free Custard Sauce For Waffles

Ingredients
  • 3 cups Half & Half Cream 18%
  • 1/2 cup sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla
Directions
  1. Heat the cream in a medium sized pot.
  2. Mix the sugar and cornstarch together and add to the cream. Whisk well. Cook on medium heat until it boils. Simmer for about 1 minute.
  3. Take off the heat and add the vanilla. Stir till combined.
  4. Pour in a bowl or jug. Ready to serve with your waffles. Can be served warm or cold.

The ingredients are simple. Half & Half cream (18% cream), sugar mixed with cornstarch and vanilla. It only takes a short time to make. You can adjust the sugar amount to your liking. This makes quite a sweet custard. If you like it less sweet start with a 1/4 or 1/3 cup of sugar and after it is cooked a little taste test. If you'd like more sugar you could add it then.

Here is what the finished custard looks like in the pot. It thickens quite quickly. Important to keep stirring so that it is lump free and doesn't burn on the bottom of the pot.

This custard sauce pairs well with fruit crumbles.
