Duinkerken does not disappoint! I tried their gluten-free cinnamon rolls recipe, and was very impressed. Very easy and delicious. I haven't had cinnamon rolls since 2013 and I was really craving some. You can check out their cinnamon rolls recipe and others on Duinkerken Foods website at https://www.duinkerkenfoods.com/. Above is a photo of the Duinkerken biscuit mix I used for the dough of the cinnamon rolls. I used my Mom's recipe for the filling and icing. You can add walnuts to the filling if you like.

Above you can see the steps for making the rolls. I used a dough hook on my mixer to make the dough. Do use a good amount of gluten-free flour on your countertop when kneading the dough so that it doesn't stick. I used my spatula to scrap off any dough that did stick to the counter and knead it back into the dough. I was really impressed with how easy it was to work with this dough. You can mix the filling (butter, brown sugar, cinnamon powder) into a paste and spread that on the dough instead of doing each ingredient separately. Adjust the sugar and cinnamon to your tastes.

Then as you can see above you roll the dough just like a jelly-roll cake and slice and put in a greased pan. Let cool for about 10 minutes before putting on the icing. You can have them without icing too.

Gluten-Free Duinkerken's Cinnamon Rolls Recipe

Ingredients For Dough (Duinkerken Foods Recipes)
  • 1 package Duinkerken Biscuit Mix
  • 1/2 cup shortening
  • 1 cup milk
  • 2 eggs
  • 1/4 cup white sugar
Ingredients For Filling
  • 1/2 cup softened butter
  • 3/4 cup brown sugar
  • 2 tablespoons cinnamon powder
Directions
  1. Preheat oven to 450 Faherenheit
  2. In a large bowl, combine the mix, sugar and shortening. Using two knives or a pastry blender, cut in the shortening until the mixture resembles coarse crumbs.
  3. Add the eggs and milk and mix until well combined for 2 to 3 minutes using a dough hook. If you don't have a mixer then just mix well by hand.
  4. On a well floured surface, knead the dough until no longer sticky. Don't over knead, you just want it so it won't stick when you roll it out with your rolling pin. Then roll out to about 1/4 inch thickness.
  5. Spread your softened butter over the dough. Then top with a layer of brown sugar and sprinkle with cinnamon. You can also mix the butter, brown sugar and cinnamon together to make a paste and spread that over the dough rather than doing three steps.
  6. Now just like making a jelly-roll, roll up the dough and form into a uniform log. Slice and bake either in a greased pan or on a greased cookie sheet.
  7. Bake for 12-15 minutes, or until browned.
  8. Let cool for about 10 minutes and put on the cream cheese icing.

Cream Cheese Icing Recipe

Ingredients
  • 145 grams softened cream cheese
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla
  • 1 cup icing sugar
  • 1-2 Tablespoons milk
Directions
  1. Mix the softened cream cheese, melted butter and vanilla together until well blended. If your cream cheese is not soft enough, you can pop it in the microwave for about 10 seconds.
  2. Add the icing sugar and mix well. Add the milk one tablespoon at a time until you get the consistency you like. Don't make it to thin as you will be spreading it on warm cinnamon rolls. You can just spread it with a knive or put in a piping bag or ziplock bag with an end snipped off and drizzle it on the rolls.

My family loves cream cheese icing, so I smother the cinnamon rolls with it, but they are great without it too. Feel free to adjust the amount of cream cheese to your tastes.
