Summer is the time for Potato Salad! My family likes a mustard potato salad. Here is the recipe I make.
Gluten-Free Potato Salad
Ingredients
- 4 cups cooked potatoes (780 grams)
- 1/4 cup finely chopped onions
- 4 hard-boiled eggs, chopped
- 1 hard-boiled egg, sliced for decoration (optional)
- 1 cup mayonnaise
- 1 Tablespoon mustard
- 2 Tablespoons white vinegar
- 2 Tablespoons sweet pickle juice
- 1/4 cup chopped Yum Yum pickles
- 1 Tablespoon sugar
- 1 teaspoon each salt and pepper
- 1-2 green onions, chopped for garnish
- 1 teaspoon paprika to decorate top of salad (optional)
Directions
- Wash potatoes. Don't cut or peel. Just put in a large pot and cover with cold water. Bring to a boil and reduce heat to medium. Usually takes about 20 to 25 minutes, depending on the size of your potatoes. Cook until done. They are done when you can easily put a fork in them. Drain and let cool. Peel and chop.
- Boil the 5 eggs until done. If cooking in a pot, put the eggs in cold water, then bring to a boil, lower to a simmer for about 10 to 13 minutes. Put in cold water and peel. Chop up 4 of the eggs for the salad and set aside one egg to slice for garnish.
- Mix the mayonnaise, mustard, vinegar, pickle juice, sugar, chopped pickles and salt and pepper in a bowl. Then add the chopped potatoes, egg and onion and mix well.
- Decorate the potato salad with a sprinkle of paprika, green onions and sliced egg and serve.
I like to use red potatoes for my salad. They keep their shape. You can use a regular onion or a sweet onion. I use Yum Yum Pickles. Any sweet pickle will do. Make it to your taste. If you like more mustard feel free to add and taste.
The decorations are up to you. You don't have to put sliced eggs on if you don't want to. Sometimes I use fresh parsley on top.
I find the potato salad tastes best if made the night before and allowed to sit in the fridge until you need it the next day. This allows the flavours to fully mix. But, it is ok to eat right away too.
