I decided to swap out the gluten-free Rice Krispie cereal in the Rice Krispie Squares recipe for gluten-free Fruity Pebbles cereal and it was a success. Everyone celiacs and non-celiacs has been enjoying it.
Above are the ingredients except the butter. You will also need a large pot, a wooden spoon, an 8 x 8 inch square pan and some cooking spray.
Melt the butter on low heat. You don't want it to brown. When it is melted add your marshmallows and stir frequently until the marshmallows are all almost melted. Turn off the heat and stir for a minute or so until well mixed.
Add in your cereal and stir until well combined. Grease your pan and put the mixture in it. Pack down lightly and let cool.
These turned out really well. Everyone enjoyed them. They have a fruit loop flavour. It has been a week now and they are still chewy!
I individually wrap them in saran wrap so they stay soft longer and are easy to grab as a snack or put in lunches. I think at Easter it would be a lovely idea to add a cup of gluten-free Fruity Pebbles to gluten-free rice krispies to make a pretty square for dessert.
