We tried a new Christmas cookie this year. Hershey's Holiday Cream Cheese cookies. They turned out well. Next time I would use less sugar. I have adjusted the sugar amounts in the recipe below. The recipe I used is a slightly adjusted version of the Hershey's recipe on the back of the chipit package.
These cookies were easy to make and tasted even better the next day.
Here is a photo of the package. I saw them at Safeway and couldn't resist trying them. The chipits have a sweet creamy flavour.
The shapes are cute tiny Christmas trees and stockings. I think they would be great as decorations on gluten-free rice krispie squares too.
Here is the back of the package. I adjusted the recipe provided to work for gluten-free cookies. I usually find that I need to reduce the amount of flour when using gluten-free flour because the gluten-free flour I use really soaks up the liquid and if I use the 1:1 ratio I find my cookies are dry. I like using Pamela's gluten-free flour.
Pamela's Gluten-free flour tht I use has xanthan gum in it. If your gluten-free flour doesn't have it as an ingredient you can add 1/4 teaspoon to each cup of gluten-free flour used. Follow the instructions on your gluten-free flour for the amount of xanthan gum to use. Xanthan gum gives gluten-free flour the stability and stretchiness that gluten provides to gluten flour.
Hershey's products are gluten-free, but always read the ingredients in case companies change their products.
My family found the original amount of sugar used in the recipe to make very sweet cookies. I have adjusted the recipe and now only use 1/2 cup of the white sugar and 1/4 cup of the brown. Adjust to your tastes.
The cookies reminded me of short bread cookies rather than sugar cookies. They kept well in the fridge and tasted even better the next day.
