Kinnikinnick gluten free Chocolate Cake Mix

I tried Kinnikinnick's gluten-free chocolate cake mix and it was delicious! The non-celiac's in the family said it tasted great, and if they were served this cake in a blind taste test they wouldn't be able to tell it was gluten-free! So I will be buying this cake mix again. The cake wasn't dry and didn't have that slight gritty taste that some gluten-free cakes have. Bonus! The product has the Canadian Celiac Association gluten-free certified logo on it! I love looking for those in grocery stores.

Kinnikinnick is a Canadian company based in Edmonton Alberta. They are one of the pioneers of gluten-free products, they started in 1991. I followed the recipe on the box. It called for the mix, 4 eggs, 3/4 cup water, and 3/4 cup oil.At first I thought it was quite runny, but I mixed it in my electric mixer for about 4 minutes and it thickened up a bit. Turned out fantastic. The cake rose nicely and didn't fall after cooling. They even have a chocolate butter cream icing recipe on the box if you need it. For this cake I used Betty Crocker's Butter Cream Icing in a can. Betty Crocker's premade icing's state that they are gluten-free. Even though I sometimes make my own icing (frosting) it is handy to use the premade ones. I always have a couple in my pantry.

Kinnikinnick's slogan is "Safe and scrumptious since 1991", and I have to agree when it comes to their chocolate cake.
