I love stuffed peppers, but sometimes I'm in a rush to make dinner. This is a wonderful and tasty meal to put together for dinner. It is easy to make gluten-free and everyone will enjoy it.
Gluten-Free Lazy Stuffed Peppers Recipe
Ingredients
- 500 grams ground beef
- 1 to 2 tablespoons oil for frying
- 1 1/2 cups chopped onion
- 2 cups chopped peppers
- 2 teaspoons minced garlic
- 2 teaspoons dried basil
- salt and pepper, to taste
- 796 mL can of chopped tomatoes. Drain and reserve juice
- 1 boullion cube, flavour of your choice
- Enough water to the reserved tomato juice to make 2 cups of liquid
- 1 cup washed uncooked rice
- 1 to 2 tablespoons tomato paste
- 1 tablespoons gluten-free soya sauce
- 1/4 to 1/2 cup ketchup
- 3 slices or about 1/2 cup of shredded cheese
Directions
- In a large pot, put the oil and fry the meat and veggies, until the meat is cooked.
- Stir often so that the meat is broken into small pieces.
- Add the rest of the ingredients except the cheese.
- Bring to a boil then reduce to low, and simmer covered for about 25 minutes or until the rice is cooked. Stir once and awhile in order to prevent burning on the bottom of the pot.
- When rice is cooked, turn off heat and top with cheese. Put the lid back on and wait for about five minutes, just to let the cheese melt.
- Serve as is or with a side salad.
I like using my cast iron casserole dish with a lid for this recipe. The thick bottom helps to prevent burning. Also, stirring once and awhile as the dish cooks helps.
You can use any type of pepper you have on hand. This time I had a bunch of multi-coloured mini peppers that needed using up. Feel free to play with the recipe. You could add zucchini or corn if you like. Also, you could make it vegetarian by substituting black beans for the ground meat. If you don't like ground beef, ground turkey, pork or chicken goes well in this recipe too.
