Are you wondering what to do with leftover chicken or turkey? Make leftover shredded chicken patties! Easy and tasty. You probably have everything you need for them in your kitchen right now.
Versatile recipe: substitute 1 cup of the chicken for shredded zucchini, carrot, or mashed potato. Use any leftover veggies you have, such as cooked carrots, peas or corn. Add some herbs such as parsley or coriander to enhance the flavours.
You could use sour cream or mayonnaise instead of yogurt.
I had made herbed chicken breasts in my instant pot at the beginning of the week and had a couple leftover in the fridge, so I made these leftover shredded chicken patties. Above are the ingredients used. I only show one egg in the photo, but I used two. I just pulled the chicken breasts apart into small pieces with my hands, but you could use a fork too. The green onions are optional, you could also use any type of onion you have in the house. I used regular yellow mustard, but you could use your favourite mustard such as Dijon or honey mustard to give the patties a flavour twist.
I used bagged cheddar and mozzarella cheese. Monteray Jack cheese would work well too.
The gluten-free bread crumbs are a binder. You could add a tablespoon of gluten-free flax seed for more fibre. Just remove the same amount of bread crumbs.
Since my chicken breasts had been seasoned with herbs when they first were cooked, I just used onion powder, garlic powder, salt and pepper for seasonings.
This is what the mixture should look like when it is all combined. You don't want it too thick or thin. Adjust the yogurt and gluten-free bread crumbs if needed. You want it just firm enough to make patties.
I make smaller patties, similar to the size you'd make for sliders. Put saran wrap on the plate first, that way the patties are easy to remove from the plate later. I will cover them with some more wrap and put in the fridge to chill. Cooling them in the fridge makes them easier to fry, they don't fall apart. They can be made in the morning and cooked in the evening.
Put a couple of tablespoons of oil in a frying pan, heat up the pan on medium heat and add the patties. Fry each side for about 3 to 4 minutes on each side, until golden. Serve with your favourite sauce: ketchup, salsa, BBQ sauce, honey dipping sauce, plum sauce, Ranch dressing or a homemade tartar sauce.
They are great in wraps or gluten-free buns.
These are a great way to use up leftover turkey from Thanksgiving or Christmas. You could add poultry seasoning to switch up the flavour. Or use leftover gluten-free stuffing/dressing instead of bread crumbs.
