I was walking down the gluten-free aisle at the Canmore Nutter's Store when these beauties caught my attention. Did I just see what I thought I saw? Oh wow!! Yes!!! Those are gluten-free certified microwavable cup cakes. Oh yes, I have to buy all three flavours. So I did. They were $7.59 Canadian each.
I have been seeing Udi's gluten-free microwavable cake cups on instagram and facebook, but I think they are only available in the USA. If not seen them in Canada - at least not where I live, but fellow Canadian celiacs Namaste has come to the rescue!! Okay that might be a bit melodramatic, but I get excited when I find new gluten-free certified products. So I had to try all three flavours - Cinnamon Sugar, Yellow and Dark Chocolate. There are 4 packets per box. Namaste is a US company whose products are certified gluten-free. They own their facility and it is free from the top 8 allergens. If you are vegan you can use this product just use a milk alternative. You can check out their website at www.namastefoods.com
Alright, you just need an average sized mug, 1/4 cup of milk or milk alternative and 1 tablespoon of oil and the mix packet. Mix together well with a fork then put in the microwave for 1 minute and 45 seconds. Let cool for 5 minutes and enjoy. Now as you can see in the photo the chocolate one has some cake on the edges of the cup - thats because I freaked out when watching it cook. The cake batter rises well above the cup and I stopped the microwave and let it go down and then started it again. The others don't have that because I held my nerve when they did the same thing. The cake batter did rise up well above the cup, but it didn't overflow. The times I've made them since I have just ignored it and have had no issues. I also tried making them in a bigger cup and that worked too, but I did take the cake out of the larger cup after it had cooled as it was easier to put on icing and eat it. They all tasted good. The non-celiacs liked them too. The cake was moist, springy and had a great texture. They are a bit pricey as is all gluten-free food, but I would buy them again as a treat.
