I have adapted my Mom's Peanut Butter Cookies to be gluten-free. I have omitted the eggs because I forgot to buy some! Without the eggs the cookies have a shortbread like texture. If you would like to make them vegan just eliminate the eggs and use a vegan butter.

Gluten-Free Peanut Butter Cookies Recipe

Ingredients
  • 1 cup brown sugar
  • 1 cup butter or vegan butter substitute
  • 1 cup peanut butter (smooth or crunchy)
  • 2 eggs (can be omitted)
  • 1 teaspoon vanilla
  • 2 1/2 cups of your favourite gluten-free flour
  • 1 teaspoon baking soda
Directions
  1. Mix the ingredients in the order given above.
  2. Blend the softened room temperature butter, brown sugar and peanut butter, then add the rest of the ingredient and stir till well mixed.
  3. Line your baking sheet(s) with baking parchment paper and give a light spray of oil.
  4. Roll the dough in about 1 inch balls, put on the baking tray and flatten with a fork.
  5. Bake in a preheated 350 Farenheit oven for about 10 minutes. Then remove and carefully move cookies with a spatula to a cooling rack. The cookies are very delicate right after baking, so take care.

I love the shortbread texture that these cookies have if you omit the eggs. If you'd like to give them a chocolate flavour you can substitute 1/4 cup of the gluten-free flour with a 1/4 cup of cocoa powder. These cookies freeze well. I have often eaten them right from the freezer. If you can't consume peanut butter you can use a peanut free alternative.
