This is an easy, five ingredient gluten-free candy recipe. My family used to make these often at Christmas time. I thought this year would be a great time to make it again.

This candy has a similar texture and mouth feel to Halva made from nuts or seeds. I like the soft crunch and slight sweet peanut buttery taste.

Combine the sugar, salt and syrup in a pot and cook over a low heat, stirring constantly until the sugar has completely dissolved. Then remove from the heat and add the peanut butter. Mix until well blended.

I like to use Adam's unsweetened peanut butter. Use whatever peanut butter you like as long as it is gluten-free. If you use a peanut butter that has added sugar then I would remove a tablespoon of sugar from the 1 cup.

Then in a large bowl put about 1/3 of the gluten-free cornflakes and 1/3 of the peanut butter mixture and stir to coat. Keep adding by thirds until you have used up all your ingredients. Mix well. I usually use my hands once the mixture is not too hot, to give the candy mixture a good stir.

Put the mixture into a well greased 8x8 inch cake pan. I like to use a cooking spray, but you can use butter too. Let the mixture cool for about an hour.

After the mixture is cool to touch. Turn it onto a cutting board. I like to cut the candy up into small bite size pieces. You can also do small thin slices if you prefer.

Gluten-Free Peanut Butter Candy Crunchies

Ingredients
  • 6 cups gluten-free cornflakes
  • 1 cup sugar
  • 1 cup corn syrup
  • 1/2 teaspoon salt
  • 1 1/2 cups peanut butter (unsweetened)
Directions
  1. Put the sugar, syrup and salt in a sauce pan. Cook over low heat, stirring constantly, until the sugar is completely dissolved.
  2. Remove from heat and add the peanut butter. Stir until well blended.
  3. In a large bowl put a third of the cornflakes, drizzle on some of the peanut butter mixture and stir. Keep adding a third of cornflakes and a third of the peanut butter mixture until you've used up all your ingredients. Stirring to coat the cornflakes as you go.
  4. I often get into the bowl with my hands when it is no longer hot, but just warm and give it a good stir about.
  5. Put the mixture into a greased 8x8 inch cake pan.
  6. When cool. Remove from the pan to a cutting board and cut into small bite size pieces or thin slices.
  7. Don't throw away the crumbs! Put in a container and save for a nice crunchy topping on ice cream or yogurt.

Store the cut up candy in an air tight container or ziplock bag.
