I was craving poptarts. Where I live there are no gluten-free poptarts to buy. So, as many celiacs are aware if you are craving something that you used to eat before you were diagnosied and can't find it in a gluten-free version in stores, then you will have to figure out how to make it yourself.

I used my Mom's easy pastry recipe that I adapted to be gluten-free. Here is a link to the gluten-free pastry recipe

I find that rolling the pastry between two sheets of parchment paper to be very easy. Otherwise I find that the dough sticks to my rolling pin and I have to use so much gluten-free flour to dust that the pastry becomes hard. Try to roll out the pastry quite thin.

Next using a ruler or whatever you have available measure out the dough for cutting your poptarts. Next time I will make these a bit smaller.

I used a knife but a pizza cutter would work well too to cut the poptarts out.

I wanted strawberry filling. Choose your favorite filling. Peach jam, raspberry jam, apple sauce are all good fillings. Make sure you leave space around the edges to close the poptarts.

Next you will need to seal the two pieces of dough using an egg wash. I just mix an egg with a bit of water using a fork and then use a pastry brush to paint the egg wash mixture onto the pastery. Then using a fork I press the edges together.

Ready for the oven. I preheated my oven to 350 degrees.

Bake them for about 15 to 20 minutes until they are golden brown.

Oh my house smells so good. I can hardly wait for them to cool down.

You can eat them as they are, but I wanted icing and sprinkles.

Just a few tips: Never use utensils that have been used with gluten. My pastry brush and pizza cutter are only for gluten-free foods. You can use tin foil or parchment paper on your baking tray and I sprayed the parchment paper with some spray oil so they wouldn't stick.
