cookie with icing

This was my Mom's icing, she used for decorating cookies. I love it! It is quick, simple and delicious. Note to celiacs: Always check the label of your ingredients to make sure they are gluten-free.



powdered sugar

If you are new to making icing, also called frosting, then note that you do not use regular granulated sugar for this recipe. You must use icing sugar, also called confectioners or powdered sugar. If you use regular granulated sugar it will not turn out.

This is a small recipe. You can easily double it. Feel free to adjust the flavourings: You can add a teaspoon of vanilla extract or almond extract or lemon juice.

Yvonne's Quick Butter Icing


Ingredients
  • 2 cups icing sugar*
  • 2 Tablespoons melted butter
  • cream or high fat milk to thin the icing out
  • food colouring of choice (optional)
  • decorations for cookies (optional)

  • *Also called confectioners or powdered sugar.


Directions
  1. Melt the butter.
  2. Put the icing sugar in a large bowl. Icing sugar is quite powdery and spread everywhere, so I find a large bowl is helpful to cut down on mess. Then mix in the melted butter.
  3. Gradually add enough cream or milk or milk alternative to get a smooth consistency. Mix well.
  4. If your icing is too runny, add more icing sugar to thicken it.
  5. Divide into smaller bowls and add different coloured food colouring to each. Mix until the colour is combined well.
  6. When your cookies have cooled down, ice them and decorate with your favourite gluten-free treats.
