This gluten-free rhubarb and strawberry pie is a perfect dessert for Canada Day. You get the red from the pie filling and white from vanilla ice cream or whipped cream on top. It is very tasty and not difficult to make.

I've been wanting to try Duinkerken's Gluten Free Pie Crust Mix. Above is a photo of the box and the ingredients. It was simple to make. You just need 1 cup of room temperature butter, 2 eggs, 2 teaspoons of white vinegar and 2 tablespoons of cold water to one pouch of mix. One pouch makes enough for one pie with a bottom and top. You will need some extra gluten-free flour to dust your rolling pin and rolling surface.

First you mix the butter and pouch of mix together to resemble crumbs, just like the photo above. You can use a pastry cutter, two knives or your hands. I like starting with two knives and finishing with my hands. Then add the rest of the ingredients and mix until you form a dough.

Divide the dough into two balls. Then roll to about a 1/4 inch thin and line your pie plate.

Mix your fruit with the sugar and cornstarch. Fill the pie and put on the crust. Make maple leaf decorations. Brush with an egg wash and bake in the oven.

Gluten-Free Rhubarb and Strawberry Pie Recipe

Ingredients
  • Prepare your favourite gluten-free pie crust dough or buy a premade gluten-free pie crust
  • 4 cups chopped rhubarb
  • 2 cups cut strawberries
  • 1/3 cup brown sugar
  • 1/3 cup granulated sugar. This is for a tart pie. If you like it sweeter add another 1/3 cup or 1/4 cup of granulated sugar
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/4 cup cornstarch
Directions
  1. Prepare your favourite gluten-free pastry recipe. Here is a link to my homemade gluten-free pie pastry. This time I used Duinkerken's Gluten-Free Pie Pastry mix. You could also use a premade gluten-free pie crust, just defrost it.
  2. Mix all the ingredients for the pie filling. I like a tart pie so I only use 1/3 cup of granulated sugar. If you like a sweeter pie add 1/4 to 1/3 cup more granulated sugar.
  3. Add the filling to your pie and top with the crust. Pinch the edges with a fork and make some venting holes. You can make some maple leaves to decorate the pie if making for Canada Day.
  4. Brush the top of the pie with an egg wash. (mix one egg with a tablespoon of water).
  5. Optional: you can sprinkle the crust with some sugar.
  6. Bake in a preheated 400 Farenheit oven for 20 minutes. Then lower the temperature to 350 Farenheit and bake for a further 30 - 35 minutes. If the edges start to brown you can cover them with some tin foil to prevent burning.
  7. Let the pie sit for 30 minutes before cutting, so that the juices go back into the fruit.

Duinkerken's Gluten Free Pie Crust Mix turned out really well. It was buttery tasting, light and flaky. I would buy again to have on hand in my pantry. I often make my own crust from scratch, but it is nice to have a mix on hand when I sometimes don't have enough gluten-free flour in my pantry.

Serve with vanilla ice cream or whipped cream. Tasty on its own too. What is your favourite pie?
