I was cleaning out my freezer and found a container of glace cherries, you know those sticky red cherries you buy at Christmas time. You can also buy green ones. Usually they are used when making fruit cakes. Well, I needed to use them and then I remembered my Mom used to make a loaf using these cherries, so I adapted the recipe to make it gluten-free and it turned out well.
This is a very rich recipe and is great on its own, but if you want you could decorate the loaf with a drizzled icing. It freezes well. For this recipe I tried Cup4Cups gluten-free flour and Yupik's ground almond flour. I like using Yupik products as they have the Canadian Celiac Association's gluten-free logo on them. Note: I am not sponsored by these two products. I bought them myself. What gluten-free flour do you like? I usually buy whichever one is on sale.
How do you use glace cherries? I'd love to hear more ways to use them, as I found another container of them in the back of my freezer! LOL! If you'd like to try some other gluten-free loaf recipes then here is a link to my Gluten-free Banana Bread recipe.
