I was cleaning out my freezer and found a container of glace cherries, you know those sticky red cherries you buy at Christmas time. You can also buy green ones. Usually they are used when making fruit cakes. Well, I needed to use them and then I remembered my Mom used to make a loaf using these cherries, so I adapted the recipe to make it gluten-free and it turned out well.

This is a very rich recipe and is great on its own, but if you want you could decorate the loaf with a drizzled icing. It freezes well. For this recipe I tried Cup4Cups gluten-free flour and Yupik's ground almond flour. I like using Yupik products as they have the Canadian Celiac Association's gluten-free logo on them. Note: I am not sponsored by these two products. I bought them myself. What gluten-free flour do you like? I usually buy whichever one is on sale.

Gluten-Free Cherry Loaf Recipe

Ingredients
  • 1/2 cup room temperature butter
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 cup almond flour (finely ground almonds)
  • 1/2 teaspoon baking powder
  • 1 1/2 cups gluten-free flour
  • 1 cup of glace (candied) cherries
Directions
  1. Cream the butter and sugar.
  2. Add eggs and blend.
  3. Add the gluten-free flour, ground almond flour and baking powder and mix well.
  4. Mix in the glaced cherries.
  5. Spray and line a loaf pan with parchment paper and put in the batter. With a wet spoon or spatula smooth the batter.
  6. Bake in a preheated 275 Fahrenheit oven for 1 1/2 hours. Check after 1 hour.
  7. Cool on a rack and enjoy.
