        <p>This is a great tasting and easy gluten-free strawberry sauce recipe. It is fantastic as a topping for ice cream. I use it to spread between my chocolate layer cakes, or as a topping for a vanilla cake. Tasty with yogurt and you can mix it with milk to make a strawberry drink.</p>

Gluten-Free Strawberry Sauce

Ingredients
  • 2 cups fresh or frozen strawberries
  • 1/2 cup water
  • 2-5 Tablespoons sugar
Directions
  1. In a medium sauce pan, add the strawberries, sugar and water and stir. Note: Start with half the sugar, test later to see if it needs the rest. The thickness and sweetness of the sauce depends on the water content and sweetness of the berries.
  2. Bring to a boil, then lower to a simmer for anywhere from 15 minutes to 30 minutes. Stir once and a while. If too thick add rest of the water. If not thick enough just simmer a little longer.
  3. When the sauce is well mixed. Taste test for sweetness. Add more sugar if needed. Using a potato masher crush the berries slightly. Simmer for another minute. Then remove from heat.
  4. Let cool and put in a container. Keeps in fridge for about one week. You can strain it if you like it more of a syrup consistency.

You can substitute other fruits such as blueberries, peaches and pineapple. The sweetness of the fruit varies, so always start with less sugar and add more as needed.
