This is a quick and easy gluten-free dinner that I make quite often. I use this ground beef taco recipe for hard tacos, wraps, and taco salad. It is a hit with the family and great for a party. Just add your favourite toppings.
In a large frying pan, add oil, ground (minced) meat of your choice (beef, pork, chicken, turkey) and chopped onions. Fry till done. Stir often to break up the meat. If you'd like to stretch your food budget you can add gluten-free lentils, beans or tofu to the meat. I have done that and my usual ration is 2/3 meat and 1/3 legumes/tofu. I have also added grated zucchini (also known as courgette, baby marrow or summer squash) or carrot sometimes.
You can make it vegetarian by using gluten-free lentils or a gluten-free meat substitute. Lentils are naturally gluten-free, but they can be cross-contaminated, so I try to look for ones with a gluten-free certification. For those of you in Calgary and area, I have found Canadian Celiac Association certified Clic lentils at The Italian Centre Shop on Fairmount Dr SE. For more information you can check out my blog about legumes. I have found Yupik brand at Costco or online. For other vegetarian meat substitutes I have tried Bob's Red Mill TVP which is quite good.
Once the meat is cooked add the rest of your ingredients and your seasoning. Here is my gluten-free taco seasoning recipe. I often make a large batch of seasoning and keep it in a jar in the fridge.
I sometimes use Club House's gluten-free taco seasoning. It is tasty and great to have on hand for those days you don't have your own seasoning made or don't have the ingredients to make it.
Here is what the gluten-free ground beef looks like after it has been simmering for about 15 minutes. I let mine cool a little before serving with your favourite sides.

I love making a taco salad the next day. I will either use the taco shells broken up or gluten-free nacho chips. The taco meat mixture makes a great sandwich filling too.
