This is one of my favourite summer salads. I had quite a bit of celery on hand, so thought I would make a Waldorf Salad. This salad lasts for a few days in the fridge.

Here are the ingredients I use. I used red grapes, but green are fine too. Use whatever nuts you have on hand. Feel free to play with the ingredients: I sometimes add raisons for extra sweetness and a chewy texture.

Usually toasted walnuts are the nut of choice, but I didn't have any. I did have cashews and find that they are a nice addition. I didn't toast mine.

For the dressing I like to use plain yellow mustard, but play around with your favourite mustard. If you'd like a sweeter dressing you can omit the mustard and lemon juice, and add some whipped cream. You can serve the salad on individual plates if you like - Just place the salad on a leave of bib lettuce and serve. I choose to serve in a large dish and the family helped themselves.

My Version of a Gluten-Free Waldorf Salad

Ingredients
  • 1 cup diced celery
  • 1 cup diced apple
  • 1 cup quartered grapes
  • 1/2 cup nuts (walnut or pecan or cashew)
  • 3 Tablespoons mayonnaise
  • 1/2 teaspoon mustard
  • 1 Tablespoon lemon juice
  • Parsley for decoration
Directions
  1. Wash your vegetables and fruit. Don't peel the apple.
  2. Dice the celery, apple and grapes to the same size and add to a bowl.
  3. Add the nuts of your choice. I used cashews as that is what I had on hand.
  4. In a small bowl mix the mayonnaise, yellow mustard and lemon juice.
  5. Add the dressing mixture to the celery mixture and stir till well coated.
  6. Decorate with fresh parsley and cool in the fridge till ready to eat.
