Why have I never made these before? They are delicious! I love butterscotch/caramel and chocolate flavours and these hit the spot. I have no idea why they are called Blondies. I did a quick look about on the internet and it seems that because they are a vanilla and brown sugar based square and therefore are a light colour they are called Blondies. They are considered similar to their cousin squares, the Brownie which as we all know is chocolate based.
Super easy to make gluten-free blondies. I even added some healthy almond flour and flax meal to take away the guilt of the sugar!
Hershey's gluten-free chipits are great to bake with. I use them in cookies, squares and melted for decoration or candies. It was awesome finding out that Hershey's Chipits are gluten-free. Makes baking so much easier as I can find them at my local grocery store either Safeway or Save-On-Foods in my town. Here is what my blondies look like in the pan. Perhaps I should have added the chocolates after browning the marshmallows, but still tasted wonderful. I love the chewiness the marshmallows gives the squares. You can add whatever you like in place of the butterscotch and chocolate pieces I used. Nuts go well too. Next time I may drizzle some butterscotch or chocolate sauce on top and serve with ice cream.
I also love these chocolate drops. They are made in Calgary by Bernard & Sons. I found these at Save-On-Foods. They have white chocolate ones too! Great for melting and using on your baked goods or even for making chocolates. So far, I have only used them melted to coat pecans and almonds which turned out really well. You just melt the chocolate in the microwave and stir in the nut of your choice. Spread on a piece of parchment or wax paper and let cool. Break up and store in an airtight container in the fridge. Delicious!
As you can see from the back of the Bernard and Sons Chocolate Drop package they are gluten-free! I did email the company and was told that 90% of their product is gluten-free. Check out their website . They also have seasonal chocolates that you can order online or go to their store in Calgary or at the numerous places that stock their product
Ingredients
- 2 cups brown sugar
- 2/3 cup butter, melted
- 2 eggs
- 1 teaspoon vanilla
- 1 1/4 cups gluten-free flour of your choice
- 1/2 cup almond flour
- 1/4 cup flax meal
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 3/4 cup of butterscotch pieces
- 1/2 cup of chocolate pieces
Directions
- Preheat your oven to 350 Fahrenheit
- Grease a 13x9x2 inch pan. You can put a layer of parchment paper at the bottom if you like.
- Mix the sugar, butter, eggs and vanilla until well combined.
- Mix in the dry ingredients.
- Stir in your butterscotch and/or chocolate pieces.
- Pour mixture into your pan and even out.
- Bake for about 20 to 25 minutes.
- Remove from oven and decorate with chocolates and mini marshmallows if you like. Put back in oven under broiler for a minute till marshmallows brown lightly. Then remove and let cool.
- When still slightly warm cut into pieces.
- Enjoy!!!!!
