The weather is warming up and that means its time for coleslaw! Here is my take on a creamy coleslaw dressing. It is gluten-free and you can make it dairy-free by using a non-dairy mayonnaise and non-dairy sour cream.
If I'm using a non-dairy sour cream then Tofutti is my favourite brand. I get it at Save-On-Foods.

I go back and forth between regular mayonnaise and dairy free. If I'm going dairy free then I usually use Earth Island Vegenaise. I sometimes make it in a bowl and whisk it together and other times I put it all in a jar and give it a good shake until it is well-mixed. Mixing dressings in a jar is great as it serves double duty as a mixing and storage container. I will often double the recipe to have in my fridge and will dress the coleslaw as needed. You can serve the coleslaw vegetables undressed and the dressing on the side which is great for those of us who are watching our calorie intake and would like control of the amount of dressing we consume.
The great thing about homemade dressings is that they are versatile. You can adjust them to your tastes. If you like a sweeter dressing add more sugar or if you like it tangy add more vinegar. I like apple cider vinegar, but if I don't have any I have used rice vinegar and/or plain vinegar with good results. Play with the herbs too. I love the taste of celery seed but parsley or dill would be tasty.
