chickpea mock tuna sandwich

I love tuna fish sandwiches, but I've been trying to add more vegetable only recipes to my meal plans. I have been hearing about using chickpeas in place of the tuna and I decided to give it a try. It turned out well. I really enjoyed it and it is super easy.

I used canned chickpeas. You need to drain the liquid off and give the chickpeas a rinse. I always try to buy Clic canned beans as they are certified by the Canadian Celiac Association.

Here is what my mixture looks like. I mashed some of the chickpeas and left some whole. I decided to give it a flavour boost by adding some grated carrot, apple, and chopped celery. Finely chopped onion, green onion or pickles taste good too. This is excellent as a salad or a spread for crackers also.

Ingredients
  • 1 cup chickpeas
  • 1/4 cup chopped celery
  • 1/4 cup grated carrot
  • 1/4 cup grated apple
  • 1 tablespoon rice vinegar
  • 2-3 tablespoons mayonnaise
  • 1/2 to 1 teaspoon mustard
  • salt and pepper
Directions
  1. Mash your chickpeas with a fork. You can leave some whole if you like. This gives the sandwich filling a bit of a texture difference.
  2. Add the rest of your ingredients and mix.
  3. Use as a sandwich filling or for crackers. Good as a salad too.

This is a great sandwich filling and I really enjoyed it and have made it many times. But, in my opinion it doesn't taste like a tuna fish sandwich filling. Have you made a chickpea sandwich filling? What do you add?
