This is an easy and delicious gluten-free dessert. I made it for Canada Day using strawberries for the red and whipping cream for the white! Everyone loved them including the non-celiacs.



Gluten-Free Vanilla Wafer, Custard and Fruit Dessert

I found it on the back of the Kinnikinnick Gluten-free Vanilla Wafers box. These are fantastic cookies and great for making a vanilla cookie crust for pudding pies or cheesecakes. They are good with chocolate pudding too! If using chocolate pudding instead of custard then bananas or cherries with chocolate shavings on top is really tasty.

I used a premade gluten-free tinned custard, Natrel lactose-free whipping cream, bananas and strawberries this time. I think they taste great after sitting overnight as the cookies soak up the custard. Note: Don't decorate the top until right before serving.

Gluten-free Vanilla Wafer and Custard Dessert

Ingredients
  • Kinnikinnick gluten-free vanilla wafers or any gluten-free vanilla wafer of your choice.
  • custard, homemade or tinned
  • whipped cream
  • cut up fruit such as bananas, strawberries, blueberries or peaches
Directions
  1. Gather some clear glasses or dessert bowls
  2. Crush the vanilla wafers and put some in the bottom of the dish or glass then layer the custard, fruit, more crushed wafers and so on. Just like a trifle.
  3. Add whipped cream and fruit on the top and then add a whole cookie.
  4. Put in the fridge for a few hours or overnight.

They make great mini gluten-free ice cream cookies. Just put your favourite flavour of ice cream between two cookies and freeze. When hard you can dip them half way in melted chocolate and add sprinkles if you like, then refreeze.
