I was shopping at Nutter's in Canmore when I spotted Molly B's Gluten-Free Kitchen's ready-to-bake tart shells in the gluten-free freezer section. I started to jump up and down and singing hallelujah (ok, not literally, it was happening in my head)! But, I was so excited as this was the first time I have seen gluten-free tart shells in my hometown.
Of course, I bought two packets immediately!! $6.99 for a package of six. I went home and decided that as it was Christmas time, Butter Tarts were needed.

I haven't made Butter Tarts since I was diagnosed back in 2013. So, I grabbed my Mom's recipe and got on making the filling. Oh my, the tarts are so good. They are light and flaky!!! They are not like my Mom's gluten pastry that I used to eat before being diagnosed with celiac disease as they do have that slight rice floury texture, but they are a great. I most definitely recommend them and they are made in Canada which is an added bonus!
